I have monitoring on some websites and I can see the ability to Snapshot performance results. Is there a method to schedule snapshots based on time, or possibly activity thresholds ? or am I missing the point of a Snapshot in this process?

You can change the threshold limit in Snapshots, by modifying your apdex threshold level.
Currently, we don't have an option to schedule snapshots. It is in our pipeline and will be available soon.
